Redware on the Fire: Cooking with Earthenware

Cast iron skillets and copper saucepans probably come to mind when you picture food preparation at an eighteenth-century hearth. However, some of the earliest cooking tools were made of redware, a red clay found readily throughout the colonies in North America. Redware forms were used to make a variety of dishes directly on the fire. What kinds of forms were used? What dishes were made in them? How did they compare to cast iron tools?
